- 2 cups mashed potatoes (fresh or instant)

- 1/2 cup plain breadcrumbs
- 1 large egg, beaten
- 1/2 cup ketchup
- 1 cup chicken broth (low-sodium)
Instructions
- Preheat your oven to 375°F (190°C) and grease a baking dish.
- In a large bowl, mix the ground meat, onion, garlic, breadcrumbs, egg, salt, and pepper until just combined.
- Shape the mixture into golf ball-sized meatballs and place them in the greased baking dish.
- In a separate bowl, combine ketchup and chicken broth; pour over the meatballs.
- Spread mashed potatoes evenly over the top of the meatballs.
- Cover with foil and bake for 30 minutes; remove foil and bake for another 15-20 minutes until golden.
