- 2 green onions, chopped

- 2 tbsp lime juice
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a mixing bowl, combine ground chicken, coconut milk, breadcrumbs, grated ginger, minced garlic, and chopped green onions. Mix until just combined.
- Shape the mixture into small balls (about 1 inch in diameter) and place them on the baking sheet with space between each.
- In a separate bowl, mix soy sauce and lime juice until blended.
- Bake meatballs for about 20 minutes or until golden brown and cooked through (internal temperature should reach at least 165°F/74°C).
- Serve hot, drizzled with the soy-lime sauce and garnished with extra green onions.
