- 1 lb lean ground turkey
- 1 cup bell peppers (any color), diced

- 2 cloves garlic, minced
- 4 cups mixed greens (spinach or arugula)
- 1 cup shredded cheddar cheese
- 1 avocado, sliced
- 1/4 cup BBQ sauce
Instructions
- Wash and chop bell peppers, red onion, and mixed greens; mince the garlic.
- In a large skillet over medium heat, add a splash of olive oil. Cook ground turkey with salt and pepper until browned (7-10 minutes).
- Add garlic and onions to the skillet; sauté until fragrant (2-3 minutes). Add bell peppers and cook until softened.
- Layer mixed greens in bowls; top with turkey mixture.
- Sprinkle cheese on top while warm to melt. Add avocado slices.
- Finish with BBQ sauce to taste before serving.
