- 1 pint fresh blueberries
- 1/4 cup white sugar
- Juice of 1 lemon
- 8 slices sourdough bread
- 4 oz white cheddar cheese, grated
- 4 oz whole mozzarella cheese, shredded
- 4 tbsp butter
- Flaky sea salt
Instructions
- In a mixing bowl, combine blueberries, sugar, lemon juice, and lemon thyme. Let sit for 5 minutes.
- Assemble sandwiches by layering cheese and blueberry filling between slices of sourdough.
- Heat a skillet over medium heat and melt 1 tbsp butter. Cook sandwiches until golden brown (3-4 minutes each side) while adding more butter as needed.
- Sprinkle with flaky sea salt before serving.
