Instructions
- Preheat your oven to 350°F (177°C) and line two baking sheets with parchment paper.
- In a bowl, cream together softened butter and both sugars until smooth. Add eggs one at a time along with vanilla extract and peanut butter; mix well.
- In another bowl, whisk together flour, baking soda, baking powder, and salt. Gradually add dry mixture to wet ingredients until just combined.
- Chill the dough for at least 3 hours before shaping it into balls about 1.5 tablespoons each.
- Roll each ball in granulated sugar if desired and place on prepared baking sheets. Press down with a fork to create criss-cross patterns.
- Bake for 12–13 minutes until edges are lightly browned but centers remain soft. Cool on the baking sheet for about 5 minutes before transferring to a wire rack.
