  • Total Time: 33 minutes
  • Yield: Approximately 24 cookies 1x

Ingredients

Scale
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 3/4 cup packed light brown sugar
  • 2 large eggs
  • 2 teaspoons pure vanilla extract
  • 1 cup creamy peanut butter
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (177°C) and line two baking sheets with parchment paper.
  2. In a bowl, cream together softened butter and both sugars until smooth. Add eggs one at a time along with vanilla extract and peanut butter; mix well.
  3. In another bowl, whisk together flour, baking soda, baking powder, and salt. Gradually add dry mixture to wet ingredients until just combined.
  4. Chill the dough for at least 3 hours before shaping it into balls about 1.5 tablespoons each.
  5. Roll each ball in granulated sugar if desired and place on prepared baking sheets. Press down with a fork to create criss-cross patterns.
  6. Bake for 12–13 minutes until edges are lightly browned but centers remain soft. Cool on the baking sheet for about 5 minutes before transferring to a wire rack.
