Instructions
- Heat olive oil in a large pot over medium heat.
- Add ground chicken; cook until browned (5–7 minutes). Remove and set aside.
- Sauté chopped onion for 3–4 minutes until softened, then add minced garlic for another 1–2 minutes.
- Return chicken to pot; pour in chicken broth and stir well.
- Add heavy cream and whole milk; mix until combined.
- Season with basil, oregano, salt, pepper, and optional red pepper flakes; stir well.
- Simmer for 10–15 minutes to meld flavors.
- Stir in grated Parmesan until melted, then add shredded mozzarella.
- Incorporate chopped spinach, diced carrot, and celery; cook until tender (5–7 minutes).
- Taste and adjust seasoning if needed; serve warm.
