- 1 lb boneless skinless chicken breast or thighs
- 12 oz rotini pasta
- 2 tbsp olive oil
- 1 tbsp butter (for searing)
- 1 tsp Cajun seasoning
- 1 tsp garlic powder
- 1 tsp smoked paprika
- Salt & black pepper, to taste
- 2 tbsp butter (for sauce)
- 4 cloves garlic, finely minced
- 1 cup heavy cream
- 1 cup whole milk
- 4 oz cream cheese, softened
- 1 cup Velveeta, cubed
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- Pinch of red pepper flakes (optional)
- Fresh parsley, chopped (for garnish)
Instructions
- 1. Cook the rotini pasta in boiling salted water until al dente; drain and set aside.
- 2. In a skillet, heat olive oil and butter over medium-high heat. Season chicken with Cajun spices and sear until golden brown; remove from skillet.
- 3. In the same skillet, melt butter and sauté minced garlic. Stir in heavy cream, milk, cream cheese, and Velveeta until smooth.
- 4. Add mozzarella and Parmesan; mix until melted.
- 5. Combine the cooked rotini with the sauce, add chicken on top, garnish with parsley, and serve hot.
