- 4 boneless, skinless chicken breasts (about 1.5 lbs)
- 1 cup orzo pasta
- 5 oz Boursin cheese (garlic & herbs)
- 2 cups low-sodium chicken broth
- 2 cups fresh spinach
- 1 cup cherry tomatoes (halved)
- 2 tbsp olive oil
- 3 cloves garlic (minced)
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C). Prepare garlic, cherry tomatoes, and spinach.
- In a large skillet over medium heat, add olive oil. Season chicken breasts with salt and pepper, then sear until golden brown (about 5 minutes per side).
- Add minced garlic and halved cherry tomatoes to the skillet; cook for 2 minutes until fragrant.
- Pour in chicken broth and bring to a boil. Stir in orzo, cover, and simmer on low for about 10 minutes until most liquid is absorbed.
- Remove lid, stir in Boursin cheese until melted, then fold in fresh spinach until wilted.
- Serve hot from the skillet or plated, garnished with extra cherry tomatoes if desired.
