- 4 medium-sized sweet potatoes
- 1 cup fresh cranberries
- 2 medium apples (Granny Smith or Honeycrisp)
- 1/4 cup brown sugar
- 1 teaspoon ground cinnamon
- 2 tablespoons unsalted butter
- Pinch of salt
Instructions
- Preheat oven to 400°F (200°C). Scrub sweet potatoes, place on a baking sheet lined with parchment paper, and bake for about 45 minutes until tender.
- Once cooled slightly, cut each potato in half lengthwise and scoop the flesh into a mixing bowl.
- Add cranberries, chopped apples, brown sugar, cinnamon, butter, and salt to the bowl. Mash until combined but slightly chunky.
- Spoon the mixture back into the sweet potato skins evenly.
- Bake again at 350°F (175°C) for about 15 minutes until heated through.
