- 1 lb lean ground beef
- 4 medium Russet potatoes, peeled and cubed
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 cup shredded sharp cheddar cheese
- 1 cup beef broth (or vegetable broth)
- Salt and pepper to taste
- 2 tbsp butter
Instructions
- Preheat your oven to 400°F (200°C).
- In a large skillet, brown the ground beef over medium heat with diced onions and minced garlic until fully cooked. Drain excess fat if necessary. Season with salt and pepper, then stir in half of the broth.
- While the beef simmers, boil cubed potatoes in salted water until tender, about 15 minutes. Drain and mash with butter and remaining broth until smooth.
- In a baking dish, layer half of the mashed potatoes at the bottom. Spread the beef mixture over them, then top with the remaining mashed potatoes.
- Sprinkle shredded cheddar cheese on top and bake for 25-30 minutes until bubbly and golden brown.
