- 150g chicken breast, sliced
- 1 red bell pepper, sliced
- 1 carrot, thinly sliced
- 1 cup uncooked white rice (e.g., basmati or jasmine)
- 1 cup broccoli florets
- 1 tsp olive oil
- Seasonings: garlic powder, dried herbs (or Italian seasoning), salt, and pepper
Instructions
- Rinse the rice under cold water until clear. In a pot, combine the rice with water and a pinch of salt. Bring to a boil then cover and simmer for 12-15 minutes.
- Heat olive oil in a non-stick frying pan over medium-high heat. Add chicken strips and cook for 5-6 minutes until golden brown.
- Stir in carrots, red bell pepper, garlic powder, dried herbs, salt, and pepper; continue to stir-fry for another 3-4 minutes until vegetables are tender-crisp.
- Steam broccoli florets in a steamer basket over boiling water for about 4-5 minutes until bright green.
- Serve the chicken stir-fry alongside fluffy rice and steamed broccoli.
