  • 3/4 cup vegetable oil
  • 1/2 cup water
  • 3 oz cherry Jell-O
  • 1012 oz maraschino cherries (drained)
  • 1/4 cup softened butter
  • 4 oz softened cream cheese
  • 2 tsp almond extract
  • 3 cups powdered sugar
  • 23 tbsp milk

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Puree maraschino cherries in a blender or food processor and set aside.
  3. In a large mixing bowl, combine cake mix, eggs, vegetable oil, and water until smooth. Stir in cherry Jell-O and pureed cherries.
  4. Pour the batter into a greased 9×13 inch baking pan and bake for approximately 30 minutes or until a toothpick inserted comes out clean.
  5. Allow the cake to cool completely on a wire rack.
  6. For the frosting, cream together softened butter and cream cheese until smooth; gradually add powdered sugar, almond extract, and milk until desired consistency is reached.
