- 1 lb boneless skinless chicken breasts
- 12 oz linguine pasta
- 2 tablespoons olive oil
- 2 tablespoons unsalted butter
- 1 teaspoon Cajun seasoning
- 1 teaspoon garlic powder
- 1 teaspoon smoked paprika
- Salt and black pepper to taste
- 4 cloves garlic, minced
- 1 cup heavy cream
- 1 cup whole milk
- 6 oz Velveeta cheese, cubed
- 1 cup shredded mozzarella cheese
- ½ cup grated Parmesan cheese
- Fresh parsley, chopped (for garnish)
Instructions
- Cook the linguine in a large pot of salted boiling water until al dente (9-10 minutes). Reserve some pasta water before draining.
- In a skillet, heat olive oil and sear seasoned chicken until golden brown (8-10 minutes). Remove from pan.
- Melt butter in the same skillet, sauté garlic, then add cream and milk, stirring until simmering.
- Stir in cheeses until melted smoothly. Adjust sauce thickness with reserved pasta water if needed.
- Toss linguine in the sauce, then top with Cajun chicken bites and garnish with parsley before serving.
