Instructions
- Heat vegetable oil and butter in a cast iron skillet over medium heat. Sauté chopped onion until translucent (about 5 minutes). Add garlic and ginger; cook for an additional minute.
- Add chicken thighs to the skillet, browning on all sides (approximately 7-10 minutes).
- Stir in ground spices: coriander, garam masala, turmeric, and chili powder. Mix well to coat the chicken.
- Reduce heat to low and let simmer for 15-20 minutes until flavors meld together.
