Instructions
- In a large bowl, whisk together flour, baking powder, and salt.
- In another bowl, combine mashed banana, melted butter, egg, buttermilk, brown sugar, and vanilla extract until smooth.
- Gently fold wet ingredients into dry ingredients using a rubber spatula until just combined (lumps are okay).
- Preheat skillet over medium-low heat and lightly grease with butter.
- Pour approximately 1/3 cup of batter onto the skillet for each pancake.
- Cook until bubbles form on top; flip and cook until golden brown on both sides.
- Serve hot with desired toppings.
