Instructions
- Prepare brown butter by melting cold unsalted butter in a saucepan over medium heat, stirring until golden brown and nutty (5-7 minutes). Let cool slightly.
- In a mixing bowl, combine flour and salt. Add browned butter and mix with water and vinegar until combined. Chill the dough for at least 30 minutes.
- In another bowl, mix sliced peaches and strawberries with sugar, cornstarch, lemon juice, zest, and salt.
- Roll out half the chilled dough into a circle to fit your pie dish; fill it with fruit mixture.
- Roll out remaining dough for the top crust, seal edges securely, and cut slits for steam.
- Bake at 375°F (190°C) for about 70 minutes until golden brown and bubbly.
