  • 3 cups fresh strawberries (hulled and quartered)
  • ¼ cup granulated sugar
  • ¼ cup + 1 tbsp cornstarch
  • 1 tbsp lemon juice
  • Optional: Turbinado sugar for garnish

Instructions

  1. Prepare the brown butter by melting cold unsalted butter in a saucepan over medium heat until golden brown; let cool slightly.
  2. In a mixing bowl, combine all-purpose flour and fine sea salt. Add cooled brown butter, water, and vinegar to form a dough.
  3. Divide dough into two halves, roll out one half to fit your pie dish, and place in the dish.
  4. In another bowl, mix together sliced peaches, strawberries, sugar, cornstarch, lemon juice, and zest until well coated.
  5. Pour fruit mixture into the prepared crust. Roll out the second half of dough and cover the filling; seal edges.
  6. Preheat oven to 375°F (190°C) and bake for about 70 minutes or until golden brown.
