- 1 cup cold unsalted butter
- 2 ⅔ cups + 1 tbsp all-purpose flour
- 3/4 teaspoon fine sea salt
- ½ cup water
- 1 tbsp apple cider or white vinegar
- 1 whole egg (whisked)
- 3 cups fresh sliced peaches
- 3 cups fresh strawberries (hulled and quartered)
- ¼ cup granulated sugar
- ¼ cup + 1 tbsp cornstarch
- 1 tbsp lemon juice
- Optional: Turbinado sugar for garnish
Instructions
- Prepare the brown butter by melting cold unsalted butter in a saucepan over medium heat until golden brown; let cool slightly.
- In a mixing bowl, combine all-purpose flour and fine sea salt. Add cooled brown butter, water, and vinegar to form a dough.
- Divide dough into two halves, roll out one half to fit your pie dish, and place in the dish.
- In another bowl, mix together sliced peaches, strawberries, sugar, cornstarch, lemon juice, and zest until well coated.
- Pour fruit mixture into the prepared crust. Roll out the second half of dough and cover the filling; seal edges.
- Preheat oven to 375°F (190°C) and bake for about 70 minutes or until golden brown.
