Instructions
- Preheat your oven to 350°F and grease an 8.5-by-4.5-inch loaf pan with nonstick cooking spray.
- In a light-colored sauté pan, melt the unsalted butter over medium heat until golden brown; set aside to cool slightly.
- In one bowl, combine mashed bananas with eggs. In another bowl, whisk together flour, dark brown sugar, baking powder, cinnamon, salt, and nutmeg.
- Gently fold the banana mixture into the dry ingredients until just combined; then stir in the melted brown butter without overmixing.
- Pour the batter into the prepared loaf pan. Decorate with banana halves cut-side up and sprinkle with additional dark brown sugar.
- Bake for 70 to 80 minutes until a toothpick inserted comes out clean; allow cooling before slicing.
