Ingredients
- 5 lbs bone-in beef short ribs
- 1 yellow onion
- 6 garlic cloves
- 1/2 cup apple juice or broth
- 1 cup marsala apple vinegar or broth
- Fresh thyme leaves
- 1 cup heavy cream
- Fresh sage leaves
- 2 tbsp salted butter
- Fresh parsley for garnish
Instructions
- Season short ribs with black pepper and sear in a Dutch oven until browned on all sides.
- Remove ribs and sauté onions and garlic until soft.
- Deglaze pot with apple juice, scraping up brown bits for flavor.
- Add vinegar and thyme, then return short ribs to the pot.
- Cover and braise on low heat for about three hours until tender.
- Remove ribs and stir in cream, kale (if using), butter, and sage to create a creamy sauce.
- Serve warm, garnished with parsley.
