Instructions
- Wash and prepare the fresh produce: dice peaches, slice cucumbers, and rinse blueberries.
- In a large bowl, combine blueberries, peaches, cucumbers, and feta cheese. Gently toss to mix.
- In a jar or measuring cup, combine lemon juice, Dijon mustard, honey, olive oil, basil, salt, and pepper. Shake or whisk until well combined.
- Drizzle the vinaigrette over the salad mixture and gently mix to coat all ingredients.
- Adjust seasoning as needed before garnishing with parsley or basil and serving.
