  • 1 tablespoon olive oil
  • 1 tablespoon finely chopped basil
  • Kosher salt and fresh ground black pepper to taste
  • 2 tablespoons fresh parsley, finely chopped

Instructions

  1. In a large mixing bowl, combine 1 pint of fresh blueberries, 2 diced peaches, 2 sliced Persian cucumbers, and 1/2 cup of crumbled feta cheese.
  2. In a jar with a lid, mix together 3 tablespoons of fresh lemon juice, 1 tablespoon of Dijon mustard, 1 tablespoon of honey, 1 tablespoon of olive oil, finely chopped basil, salt, and pepper. Shake until combined.
  3. Pour the vinaigrette over the salad mixture and gently toss to combine.
  4. Taste and adjust seasoning if needed. Serve immediately or refrigerate until ready.
