- 1 pint fresh blueberries
- 2 peaches (diced)
- 2 Persian cucumbers (sliced)

- 3 tablespoons fresh lemon juice

- 1 tablespoon olive oil
- 1 tablespoon finely chopped basil
- Kosher salt and fresh ground black pepper to taste
- 2 tablespoons fresh parsley, finely chopped
Instructions
- In a large mixing bowl, combine 1 pint of fresh blueberries, 2 diced peaches, 2 sliced Persian cucumbers, and 1/2 cup of crumbled feta cheese.
- In a jar with a lid, mix together 3 tablespoons of fresh lemon juice, 1 tablespoon of Dijon mustard, 1 tablespoon of honey, 1 tablespoon of olive oil, finely chopped basil, salt, and pepper. Shake until combined.
- Pour the vinaigrette over the salad mixture and gently toss to combine.
- Taste and adjust seasoning if needed. Serve immediately or refrigerate until ready.
