- 2 cups all-purpose flour
- 1 cup granulated sugar

- 1 teaspoon baking powder
- 1 teaspoon kosher salt
- 1 & 1/2 teaspoons cinnamon
- 2 cups shredded zucchini (about 2 medium zucchinis)
- 1/2 cup butter (melted)
- 3/4 cup brown sugar (packed)
- 2 eggs
- Optional: Chocolate chips and nuts
Instructions
- Preheat oven to 350°F and prepare a loaf pan with parchment paper or nonstick spray.
- In a medium bowl, whisk together dry ingredients: flour, sugars, baking soda, baking powder, salt, cinnamon.
- In a large bowl, combine melted butter, brown sugar, eggs, and vanilla until smooth.
- Shred zucchini and squeeze out excess moisture before adding it to the wet mixture.
- Gently fold dry ingredients into wet ingredients until just combined; add in chocolate chips or nuts if desired.
- Pour batter into the prepared loaf pan and sprinkle with raw sugar on top.
- Bake for about 60 minutes or until a toothpick comes out clean.
- Let cool before slicing.
