- 2½ cups grated zucchini
- 1 cup chopped walnuts
Instructions
- Preheat your oven to 350°F. Grease a 9-inch loaf pan or use two smaller pans on a rimmed baking sheet.
- In a medium bowl, whisk together the flour, salt, baking powder, baking soda, cinnamon, nutmeg, and cloves.
- In a large bowl, combine oil, granulated sugar, brown sugar, vanilla extract, and eggs. Mix until smooth.
- Gradually blend the dry mixture into the wet ingredients until just combined; fold in grated zucchini and chopped walnuts.
- Pour the batter into the prepared pan(s) and bake for about 50–60 minutes or until golden brown and a toothpick comes out clean.
- Allow cooling completely before slicing.
