- 4 cups zucchini (about 3 medium)
- 2 large eggs
- 1 cup panko bread crumbs
- 2 cups sharp white cheddar cheese
- 4 tablespoons butter (melted)
- 1 cup mayonnaise
- ¼ cup sour cream
- ¼ cup drained zucchini relish
- 2 tablespoons scallions minced fine
- 2 teaspoons Worcestershire sauce
- ½ teaspoon smoked paprika
- ½ teaspoon white pepper
- ½ teaspoon onion powder
Instructions
- Grate the zucchini and sprinkle with salt. Let sit for 30 minutes to drain excess moisture.
- Preheat your oven to 425°F.
- In a mixing bowl, combine beaten eggs, garlic, scallions, panko breadcrumbs, Parmesan cheese, lemon zest, and cheddar cheese.
- Squeeze out moisture from the drained zucchini and mix it into the other ingredients.
- Form fritter patties on a parchment-lined baking sheet.
- Brush with melted butter and bake for about 24–27 minutes or until golden brown.
- Prepare the smoky dipping sauce by combining all sauce ingredients in a bowl and refrigerate until serving.
