Instructions
- Preheat oven to 425°F and coat a baking sheet with cooking spray.
- Prepare three shallow dishes: one with flour, salt, and garlic powder; one with a beaten egg; and one with breadcrumbs, Parmesan cheese, Italian seasoning, garlic powder, salt, and pepper.
- Coat each zucchini stick in the flour mixture, then dip in the egg, and finally coat thoroughly in the breadcrumb mixture.
- Place the coated zucchini fries on the prepared baking sheet in a single layer.
- Bake for about 20 minutes or until golden brown and crispy, turning halfway through.
