- 2 large baking potatoes
- 200g block of feta cheese
- 2 tbsp olive oil
- 1 head of garlic
- Fresh basil (1/4 cup)
- 1 lemon (quartered)
- 1 tbsp honey
- Dried thyme
- Dried oregano
- Red chili flakes
Instructions
- Preheat your oven to 200C (390F).
- Wash and cube the baking potatoes. Par-boil in water for 6-8 minutes, drain, and let steam dry.
- Toss the potatoes with olive oil, thyme, oregano, salt, and pepper in a baking dish.
- Roast in the oven for 30-40 minutes until golden brown.
- Add feta cheese in the center of the tray and squeeze half a lemon over it.
- Roast for another 15 minutes until golden.
- Squeeze out softened garlic from its skin and mix with remaining lemon juice; combine with potatoes and toss in fresh basil.
- Drizzle honey over the finished dish before serving hot.
