Ingredients

  • 2 large baking potatoes
  • 200g block of feta cheese
  • 2 tbsp olive oil
  • 1 head of garlic
  • Fresh basil (1/4 cup)
  • 1 lemon (quartered)
  • 1 tbsp honey
  • Dried thyme
  • Dried oregano
  • Red chili flakes

Instructions

  1. Preheat your oven to 200C (390F).
  2. Wash and cube the baking potatoes. Par-boil in water for 6-8 minutes, drain, and let steam dry.
  3. Toss the potatoes with olive oil, thyme, oregano, salt, and pepper in a baking dish.
  4. Roast in the oven for 30-40 minutes until golden brown.
  5. Add feta cheese in the center of the tray and squeeze half a lemon over it.
  6. Roast for another 15 minutes until golden.
  7. Squeeze out softened garlic from its skin and mix with remaining lemon juice; combine with potatoes and toss in fresh basil.
  8. Drizzle honey over the finished dish before serving hot.
