Instructions
- Bring water to a gentle boil in a pot. Add the eggs carefully and cook for exactly 7 minutes. Cool them under cold water, peel, and slice in half.
- Toast the whole grain or rye bread until crisp and golden brown.
- Spread cottage cheese evenly on each slice of toast. Layer thin avocado slices over the cottage cheese followed by sliced cherry tomatoes.
- Season with salt and pepper, garnish with fresh herbs or microgreens, and serve alongside halved jammy eggs.
