Instructions

  1. Preheat oven to 180°C (350°F). Crush biscoff cookies and mix with melted butter. Press into the bottom of a springform pan and bake for 10 minutes.
  2. Combine melted butter, flour, brown sugar, and oats for streusel topping; set aside.
  3. Toss sliced apples with brown sugar, cinnamon, and cornstarch.
  4. In a mixing bowl, beat softened cream cheese until smooth; gradually add sugar. Mix in yogurt and vanilla, then incorporate eggs one at a time along with spices.
  5. Layer half of the cheesecake filling over the crust, followed by half of the apple mixture. Repeat layers and top with streusel.
  6. Bake for about 85 minutes until the center is slightly jiggly. Let cool in the oven for an hour before refrigerating for at least four hours.
